AIR PRODUCTS INTRODUCES LIN INJECTION SOLUTION
April 2008 – Air Products, the leading cryogenic gas, equipment and services supplier, introduces the Freshline® Liquid Nitrogen Injection Solution (LIN-IS). By providing consistent and repeatable rapid cooling of meat products during mixing and processing, the LIN-IS offers significant advantages over existing cooling alternatives, improving product quality and reducing bacterial growth.
The LIN-IS injects liquid nitrogen directly into the mixing or forming process, ensuring rapid cooling. Unlike previous cooling techniques – including the addition of frozen meat and the use of surface coolants – LIN-IS gives the user precise temperature control. This achieves immediate heat transfer, reducing gas consumption and minimising nitrogen wastage.
The Freshline LIN-IS can be fitted to many existing food mixers and formers. By significantly reducing fat breakdown and bacterial growth, improving the regularity of meat cuts and enhancing appearance by avoiding the formation of metamyoglobin (which results from excessive exposure to oxygen in the air), manufacturers can achieve the ideal size and texture needed for further processing.

Liquid nitrogen has an enormous amount of freezing power. Compared to traditional mechanical equipment, liquid nitrogen solutions offer significant advantages to food processors – reducing moisture loss, avoiding water crystal formation and individually quick freezing products to minimise the possibility of clumping.
